If you ask where in China the prettiest stinky tofu comes from, I’d say it has to be Shidian, Yunnan. Here we set tofu with fermented sour whey, and the surface turns naturally rough and uneven—perfect for growing a coat of “hair” that looks like a snow-capped mountain. The mycelium spreads like brocade, weaving a whole fluffy “snow mountain” on every piece.
It smells pungent, but once you taste it, it’s aromatic , soft, and pleasantly sticky. You can eat it raw, or cook it however you like—pan-fry, deep-fry, simmer, grill, steam… anything works. The pickled tofu every family makes is also fermented from this same hairy stinky tofu.
Yunnan’s climate is the greatest natural fermentation jar of all. And this surprising, unforgettable flavor—only those who’ve tasted it will ever truly miss it.
