I came to Local (actual name)
on my last day in Cusco. It was one of the most well-reviewed restaurants in this city — so I fought every urge to come here. But I had very little time (just a few hours) to venture out before hopping on my flight, so I popped in.

Everything blew me away.

The tomato cream soup had so many layers of flavor that each bite was its own experience. Remember that Ratatouille moment? Yeah, it was like that.

Then the pasta I thought I ordered came as a meat dish. I just assumed I ordered wrong in my terrible Spanish, so I went with it. The meat was impeccably cooked, the sauce was insanely flavorful but not too rich, the potatoes were impossibly creamy but not just drenched in butter (as it often is). I couldn’t have asked for a more perfect meal.

My server then came and explained that he’d brought the wrong dish and felt so terrible, but I told him that I was SO glad he did and that it was the best meal I’d had all year. It ended up being one of their classic items they’d just brought back last fall — short ribs in a demi-glace with mashed potatoes. So simple and so perfect.
