Edamame are soybeans in their youth. Different stages mean different flavors—and different ways to eat them. Fresh edamame are crisp, tender, and naturally sweet; once boiled, they’re as sweet as candy beans. They’re delicious stir-fried with meat, pounded fresh, or simmered into soups.
When soybeans fully mature, they’re made into tofu—soft, fragrant, and sweet. Fry the tofu until golden, soak it overnight in natural alkaline earth, then cook it: that’s Pocket Tofu—chewy outside, creamy inside, a signature specialty of Jinj i in Baoshan.
