No Deep Frying! Air Fryer Crispy Noodles w/ Shrimp 气炸锅脆面虾球 Chinese Restaurant Prawn Chow Mein Recipe

Serves 4

Ingredients

For the crispy noodles
2 nests (approx. 200g/7.1 oz) fresh wonton egg noodles (or 140g/4.9 oz dried egg noodles)
1–2 tbsp cooking oil

For the gravy
½ large or 1 small yellow or red onion, cut into wedges
4 slices young ginger
2 spring onions, trimmed and cut into lengths
300g (10.6 oz) prawns (unpeeled weight); peeled and deveined, with the heads reserved to make the stock
3 garlic cloves, chopped
500ml (17.6 fl oz) water
½ chicken stock cube (Note: if using liquid chicken stock instead, replace the water and omit the cube)
1 tsp light soy sauce (plus extra to taste)
A few dashes of ground white pepper
¼ tsp sugar
A handful of leafy greens, such as kailan (Chinese broccoli) or choy sum
A little cornflour slurry (cornflour mixed with a splash of cold water)
½ or 1 egg, lightly beaten
1 tsp sesame oil
