The gilthead sea bream (Sparus aurata) or sea bream, is a species of bony fish belonging to the Sparidae family (Sparidae) whose size regularly reaches 50 cm for 2 kg and can reach up to 70 cm for 6 kg.

Several different species bear the vernacular name of sea bream, but in France, "sea bream" written with "au" specifically designates Sparus aurata, the gilthead seabream, a fish very popular in gastronomy.

It was shown in the early 2000s that within the Mediterranean population, there were genetically differentiated sub-populations, for example very different between the two shores of the western Mediterranean.
