Grilled pork, rice noodles, a light dipping sauce, and all the fresh herbs—made to impress my Vietnamese family. 😉

Bún Chả uses two kinds of pork:
• Pork belly slices
• Ground pork patties

The marinade:
Shallots, green onion whites, garlic, chicken bouillon, fish sauce, oyster sauce, pepper, MSG, and nước màu (or sub with brown sugar).

Sweet & light dipping broth (nước mắm):
• ~4 cups water
• ~⅓ cup fish sauce (adjust to taste)
• ~½ cup sugar
• 2 tbsp vinegar (or lime)
It’s lighter and sweeter than southern-style nước mắm—perfect for soaking your noodles and grilled meat.

Pickled veggies (đồ chua):
Papaya + carrots
• Salt + sugar for 30 mins to sweat
• Rinse, then marinate with more sugar + vinegar

Assemble:
Add vermicelli noodles, grilled meat, and pickled veg to your dipping bowl. Serve with lettuce, cilantro, and mint. Eat it all together, right out of the bowl.

Grill outside for the best flavor!
