This is one of the lesser known, but phenomenal Vietnamese noodle dishes that is a must-try for travelers. Pho noodles are fried with a little bit of soy sauce in a wok, until slightly crispy. Then beef shank and turnip greens are stir-fried separately before being piled on top of the noodles.

It’s seriously one of the best simple meals that you can eat when you are in Vietnam, and it can be found just about everywhere in the north. You might need to look a little harder in the South, but that means you you just need to know what you’re looking for. The name of the dish is Pho Xao. It can usually be found where you find Vietnamese fried rice with beef and pickled green mustard. It’s YUUUMMMMEEEEHHHHH!!
