HOMESTEAD RECIPES

PUMPKIN CHOCOLATE CHIP SOURDOUGH PANCAKES
1/2C discard
1C milk
1 egg
1/4C honey
1/4-1/2 C pumpkin puree
-whisk to combine
2 C flour
2tsp salt
1 tsp baking soda + powder
1 tbsp cinnamon
-fold into wet ingredients, add chocolate
-fry in tallow 2-3 min each side or until golden

SOURDOUGH CRACKERS
1/2C starter
1.5C water
1tbsp salt
2.5 C flour
Salt for dusting

Mix starter, water, salt. Stir in flour and then turn out onto a floured work surface to knead into a ball. I like to divide it in two to make it easier to roll out on parchment; 1/4” thickness for crispy crackers, thicker for more chewy ones.
Score and dust with salt.
Bake at 350 for 10-20min or until golden.

Flatbread
1/2C starter
1C water
2tsp salt
2C flour
(Sometimes I will add cinnamon to flour & honey to water to make a sweet version, or herbs to flavor- like dill or rosemary!)

Mix starter, water & salt. Add flour and stir until combined, turn out on a floured work surface and knead for 2-3min. I tear into 4 pieces and knead each quickly into a ball, then stretch and fry in tallow or butter.

BROWN BUTTER SEA SALT CHOCOLATE CHUNK SOURDOUGH COOKIES
2 sticks butter, browned
1 C brown sugar
1/2C cane sugar
-whisk well together, add
2 eggs
1/2C discard
1 tbsp vanilla
-whisk and add dry ingredients:
2 1/4C flour
1 tsp slt
1 tsp baking soda
-fold into wet and add 8 oz chopped milk + dark chocolate. chill 12-24 hours, drop from rounded tablespoon onto cookie sheet and bake at 350 for 10-15 min
