Banh Mi (Vietnamese-style Baguette)

Mixture A:
450 grams water
1 whole egg
15 grams instant dry yeast
10 grams white sugar
300 grams all-purpose flour

• In a mixing bowl, mix together water, egg, yeast, sugar and flour until smooth. Cover with plastic wrap, and rest at room temperature for 1 hour.

500 grams all-purpose flour
10 grams salt
3 grams bread improver

• After 1 hour, add 500 grams flour, salt, bread improver to mixture A.
• Knead for 12 minutes until dough is developed.
• Assemble as Banh Mi.


Homemade Pate

500 grams ground pork (with fats)
300 grams pork liver (cleaned, washed, minced in a blender)
½ cup white wine (dry, NOT sweet)
1 teaspoon dried Thyme
½ teaspoon sweet paprika
2 teaspoons salt
2 teaspoons coarse black pepper
4 cloves of garlic, grated
Bay leaves, for topping

• Combine all ingredients until blended. Transfer into a baking dish, top with bay leaves, and cover with aluminum foil,
• Cook bain marie in a preheated 300F oven for 2 hours.


Banh Mi Sauce:

200 grams mayonnaise
1 tablespoon fish sauce
2 tablespoons hoisin sauce
1 tablespoon sriracha
4 cloves of garlic
Cilantro stems and roots, as needed
2 red onions, sliced and toasted

• Blend all ingredients in a blender until smooth


Grilled Pork:

500 grams pork loin (pounded until thin)
4 stalks lemongrass, pounded
Cilantro stems and roots, as needed
4 cloves garlic, include skin
1 inch cube ginger
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons sriracha
2 tablespoons brown sugar
1 teaspoon cornstarch
Pinch of baking soda

• Blend all ingredients in a blender (except the pork).
• Marinate the pork overnight. Grill as needed.


Vegetables:

2 cucumber, remove seeds and thinly sliced
1 carrot, julienne
2 red onions, sliced
2 bunch cilantro (leaves and stems)

2 kilos whole beef brisket (bone off)

12 pcs black cardamom
12 pcs star anise
8 pcs cinnamon bark
1 tablespoon whole black pepper corn
1 tablespoon coriander seeds
5 pcs red onions (peeled)
12 cloves of garlic (peeled)
3 inch cube ginger (peel on)

Water, as needed
Fish sauce
Salt
Hoisin sauce
MSG, as needed
